We are a couple with a one year old looking to spend time in February in the Carribean - just wondered if there was a "better" island for us

A lot depends on your budget and the type of things you are looking for. As someone who has traveled and sailed the Caribbean for over 25 years, here are some tips: 1.
Sandals does not allow kids--they are a couples resort.
All Caribbean islands are family friendly. However, there is one where people return year after year and they write that the thing that draws them is, not the over 300 beaches, and all the great stuff, but the people. When you vacation there, you see vacationers walking through villages looking for local ladies they call "Auntie" and "Granny" because they took care of them when they were children and they seem to have a lasting bond with those local ladies who treat them as their own children. I am talking about Antigua/Barbuda. Click on the islands' websites. One of the latest children attractions is Stingray City. They have removed the barbs of stingrays and have them in a large natural environment, where children can ride their backs and feed them. Hotels such as Jolly Beach and Colonna beach not only have special children's' programmes, but Colonna has in house nannies as well.

Boaz.

barbados is superb especially the ALMOND BEACH VILLAGE/CLUB. it is a fully inclusive resort and many stars go there to chill out so you may bump into brad pitt or someone

I would go with Cuba too.
Great holiday destination and locals really friendly with everyone.
My sister went with her two children a couple of years ago and loved it.

DEFINITELY RESEARCH PUERTO RICO AS THIS ISLAND MAKES FOR AN EASY( NO PASSPORTS REQUIRED IF TRAVELING FROM THE US) AND LESS EXPENSIVE CARIBBEAN VACATION DESTINATION.

Barbados is a good choice lovely beaches , friendly people economically stable (the Barbados dollar is $2 to 1 US) check various carribean websites and then decide.

Try Barbados! I've been there 4 times, and LOVE that country! I think try a hotel that suits a child somewhere on the beach, I believe either on South or West Coast. If you need me to find out information for you, I can see what I can do -- feel free to contact me: totally_del@hotmail.com .

Tobago is beautiful and you can 'pop over' to Trinidad if you wish.

Grand Cayman is nice, and is not as rough or economically depressed as some of the others. Really nice beaches too.

Cuba is fantastic and economic

You're probably best going to the Dominican Republic. It caters well for families with young children and probably is the best value for money destination in the Caribbean.
