Cancun and Cozumel have some of the best deals in the Caribbean. You might also want to consider a cruise. You can find some amazing prices on all-inclusive cruises at http://www.vacationstogo.com. Just be aware that the late summer and early fall months are hurricane season, so if you choose to go at that time of year I'd suggest buying trip insurance in case the cruise gets canceled. I've seen some great deals in December too, and if you go far enough south it's just about as warm then as it is in the summer.

A lot of times you can book with Sandals in August and get half off. We got a honeymoon to St Lucia 1/2 off, we booked in August and took it in June.

Try the poor man's Grand Cayman.......San Andres Island Colombia. It is in the caribbean off the coast of Nicaragua and has 7 different shades of blue around the island. Absolutely gorgeous. You can get all inclusive deals through Avianca airline including airfare. Also a lot of Canadian Travel agencies contract cheap deals also,
