My personal {albeit bias} opinion, is Dominican Republic. It literally has everything you could possibly want in an "outdoorsy" kind of vacation. If you want to hike, there's Pico Duarte; you want to see cave drawings of Taino Indians, there's Las Caritas; you want snorkel/scuba diving, most resort/hotels can provide you with tours. DR has EVERYTHING your heart desires, not to mention the most beautiful beaches the Caribbean has to offer and the kindest, most welcoming people you can ever meet. Puerto Rico
I don't know about rock climbing, but they do have cave exploring in Camuy. You also said you like to snorkel, so you really should visit the Bio Bays (see link below). There are so many things to do in P.R. that you can't see it all in one trip.
By the end of your honeymoon you will say, "Puerto Rico es mi Encanta!".

If you want to ride horse/rock climb, as listed above in the other answers, you will have to stick to the bigger islands ie. Jamaica/Puerto Rico. If you can do away with those, I would suggest some of the smaller islands ... more peaceful and quiet for a honeymoon. St Barths is a great honeymoon island .. also check out St. Lucia and Dominica .. all three of those islands are a little out of the main stream .. you'll meet less obnoxious people ;)

Mountain climbimg(Dominica is the most mountainous relative to size and her tallest mountain is almost 5000ft)
Hiking-(One of a kind sites such as the World's famous boiling lake 2nd largest in the world largest of its kind)
And the list goes on and on and on and on.

It was the main island in which the moves Pirates Of The Caribbean 2&3 were filmed.

Trinidad and Tobago! Awesome nightlife in Trinidad, as well as the Asa Wright bird sanctuary and you could also go to Tobago for gorgeous beaches, the world's oldest government-protected rainforest and lots of other outdoor activities. Plus foods too numerous to mention them all, music and a warm welcome.
