Carnival is known as the fun ship, and there is a lot of partying going onboard, with a lot of young people (also a lot of kids and families) But, the accomodations, food, etc. are not the best quality I have been around.
I think that Royal Caribbean is a lot more fun, has a lot more to do and makes a big improvement over Carnival based on rooms, cleanliness, service, food, etc.
Carnival is almost always less, sometimes Royal Caribbean is a little less or the same price, but I think that Royal Caribbean is worth the extra money.
It also depends on how much you are wanting to spend and what you are looking for onboard. There are a lot of other great lines, i.e. Disney, Princess, Cunard, Celebrity, NCL, etc. But these lines tend to run more, some cater more to older adults, while Disney caters more to family and kids but still makes a great choice for adults as well.
Just be sure you read about age restrictions before booking or even looking at lines. For example, with Carnival you have to have a parent or guardian that is 25 or older travel with you if you are under 21. Royal Caribbean requires someone to travel that is 21 or older if you are under 21. So just be sure to check into that before you book the vacation, they should let you know when you try to book, but you never know.
