Well for the luxury cruise liners about 2 to 3 years.

There have been many specials about this both on The Travel Channel & Discovery Channel. Building & shake down cruise (where they test it for acouple of days without passengers) average is 3 months. Some take alittle longer depending on if all can be assembled at one place. For the most part they are build in sections & then placed together like a puzzle. May not sound so but, a very interesting show to see how the ship or one like it was that you are sailing on was build.

It does not take days, neither months, but years.
First the architects have to be found, plans need to be made.
Then a building shipyard needs to be found. (besides financing)
Once the order has been placed with a shipyard it can easily take 4 years to have the ship delivered to the owner. Below is a link for the NCL ship being built, as a reference.

First the pieces need to be built, the cabins, etc, the machinery installed and then the pieces are assembled.

Of course all this depends on the size of the ship as well, but a minimum of 3 years is a good average from the day of order to the day of delivery.

From the time they lay the first keel piece to delivery, about 2 years. From initial planning, to drawings, to models, to building to delivery, could be 5+ years.

Depends on how quickly you want to get it done, and how many people you have working on it.

Italy's premier shipbuilder Fincantieri has started work on its latest and biggest luxury cruise ship, the Carnival Dream.
The deluxe boat, commissioned by Carnival Cruise Lines of the USA, will be built at Fincantieri's shipyards at the port of Monfalcone in northeastern Italy.
The delivery of the ship is planned for October 2009.
The Carnival Dream will be the largest ship ever built by Fincantieri: 130,000 tonnes, 306 m long and 37 m wide.
The actual build, fit out and trails of the Carnival Dream are planned to take 17 months.
As this is a new class of ship, the planning and design would have been started a few years ago with the design phase of Carnivals other new ships, Carnival Freedom, scheduled to enter service in 2007 and the 112,000-ton Carnival Splendor is scheduled to enter service in 2008.
