Most cruise lines allow you to request special menus.

Depending on your sensitivity you might find that room service could be a better choice as you can order your "low fat" diet. If for example you are at a formal waiter service evening meal for example you may have a different waiter each meal (who is pushed to serve many people) who may not understand your allergy and can cause chaos in the kitchen (every meal) trying to get your special food!

We have just come off a cruise and it would have been easy in the self service to choose at every meal.

Did you just want to tell everyone about the Cruise ?? If its
CELEBRITY I would think you could get whatever you want !
Have a nice time

Andy
On Holland American line, the heart healthy choices are marked on the menus. As for the buffets, you will have to use your own judgement. But, do ask them for advice before you sail.
