I assume you are in UK and want one of the 2 night 3 days ones from Southampton to Bruge, Guernsey etc.
They are only offered in Spring and Autumn (slower times of the year for the companies) as low cost "trials" for people who have not cruised before.
One including Guernsey is best as the ship can't dock and you get the experience of a trip to shore in the tenders. (They are tenders for this sort of journey, but lifeboats when you are doing your Muster Station drill!)

Have you tried Plymouth to Santander? (lovely city, well worth a visit) or Portsmouth to Bilbao, not luxurious either of them but the latter has a well kept secret insofar as you see whales and dolphins in the Bay of Biscay.
