The time, in which time zone you are in.
However, there is some kind of flexibility the ship has in adjusting their ship's time.
e.g. if you depart from Europe and cross the Atlantic to go to Miami, you know that the difference in time is a total of 6 hours.

Your crossing from Europe to Miami will take around 10 days.
So on 6 of those days you will set your clocks back for 1 hour each time, in order to be on local time, when the ship arrives.

When the time changes take place are decided by the Master of the ship and depend on several practical things.

You would do your last change of time mostly 2 days before arriving in Miami, since changing the time always effects peoples efficiency of work.
You would not change more than 1 hour at a time - since this means the people which are on watch (Engine and Bridge officers, oilers and AB's) will have added/deducted of each person's watch only 20 minutes.

You also want to keep with the natural light, so depending on when sunrise is you would adjust your clocks accordingly for those days.

(So the people - mainly doing maintenance on Deck - will work at their regular time - but with daylight)

If someone commits a crime while on the cruise - the law which would be applied depends on the location of the ship at that time (international waters - international laws and the laws of the flag under which the ship is sailing )
The nationality of the one commiting the crime and of the victim will come into play as well.
Let's assume a passenger murders another passenger, which is an American citizen on the way from Europe to Miami, the police would take the one who commited the crime right off the ship at arrival and lock them away.

And that person then had to answer to the US authorities. Normally, the country of origin of the victim would have an interest to have the one who committed the crime being tried in the victims country.
So then in depends what agreements exist between the 2 countries in order to get the offender handed over to the other country.

Depends on a few factors actually...

1. Based on the current time zone your in
2. When the master of the vessel gives a verbal command to change the clocks.. (depends on which cruise line you're cruising with)

Should someone commit a crime onboard, depending on the severity of the crime, it would usually be dealt with by the security officer and the master of the vessel. Resulting in the person being confined to their cabin or suite and being put off the vessel at the next port. With no further action.

If we are talking serious crime, then depending in which countries territory the vessel is in, the authorities will be called at the next port and it will be dealt with either under maritime law or civil law of that country.

(Also depends on the criminals nationality - dont ask my why that is though..)

As you move time zones you will get announcements to change your watch.

You are considerd to be the ship's home nation, i.e. Celebrity - USA, P&O (although owned by Celebrity which is American) - UK.

Even oceans have time-zones missy. And if a crime were to be committed at sea, it would on international sea waters, however, i think they would have to answer to the country of origin (from where the boat departed). Like an american cruise liner = America. British cruise liner in, let's say, the middle-of-nowhere Pacific = Britain.

The ship has it's clock, it is usually set to the time zone from where you depart.

so If you depart from miami fl. it will be eastern time. etc.
