The main difference you will see will be the dining.
Carnival has assigned dining for dinner. You will have the same waiters and waitresses everynight of your trip. The same table mates. This allows you to have conversations with the same people, and help build friendships. The waiters and waitresses will know what you like to drink at nights with your meal. They get to know as well. This allows for a more personable experience.
On NCL, it is open dining. In some cases you may have to wait to eat, or/and you wont have the same waiters and waitresses, you will eat with different people every night, so your conversation every night will be, "where are you from" "do you have in kids" ...etc etc... you may as well tape your questions and answers on a tape recorder and push play.
This is the main difference...The other differences depends on the itinerary and which ships you are comparing. On Hawaii cruises, NCL has american employees, and for some reason...unknown to me, the service is not as good as Carnival or Royal Caribbean (especially).... |

I've only been on an NCL cruise, but when we were docked next to a CCL ship, it seemed dirtier and just nasty. We had a great time on both our NCL cruises (Florida & Carribean). Not top of the line as far as cruiselines go, but it's definitely family friendly - especially Norwegian Dawn.
Have fun! |

The mass market cruise lines are all very similar. The service, food quality and overall cruise experience is pretty similar between ccl, rccl and ncl. As mentioned, ncl has 'free style' dining which means you can go to the main dining room whenever you want, just as you would any land based place. On ccl, you have an assigned seating time for the main dining room for dinner. However, there are alternative dining options so you can always skip the main dining room and eat at the buffet whenever. CCL also has 24hr pizza and ice cream. ncl, the ice cream is only available for a few hours a day. ccl also has a bit more of a vegas / tacky factor, ie hairy chest contest etc. NCL is a bit more geared towards mature people. The demographics on ncl are a bit older, however the biggest determining factors are time of year when you cruise and length of cruise. Also, the age / size of the ship makes a difference. Newer ncl ships like the jewel have much more ammenities and are more family oriented than older ones like the dream or sea. Although those ships are very nice for couples. Pretty much all the ccl ships, even the older ones are designed with families in mind. |
