Here are the best for certain activities:
Snorkeling:
Tortola, Grand Cayman, Dominica, Bahamas.
Hiking:
Grenada, Dominica, Belize, Mexico.
Wildlife:
Belize, Mexico, Grenada, Dominica, Barbados, Bahamas.
Beauty:
Dominica, Mexico, Bahamas, Barbados, Grand Cayman, St. Thomas.
Shopping:
Mexico, Bahamas, Grand Cayman, St. Thomas, and St. Martin.

Really all the islands are nice, but I gave you the ones that have specialties.

My favorites are Key West, St. Thomas, St. Maarten, Grand Cayman, Tortola, and Curacao, but I have to admit that I have enjoyed everywhere I've been in the Caribbean. Unless you go on an extended cruise or back-to-back cruises or on a private yacht you won't get to everyplace you want, but that simply means you need to go again!

You did not say if you want to come to the Caribbean and then take the cruise or take the cruise from there. Additionally, you did not say where you are coming from. This helps.

There is a 2-week cruise on the Sea Princess that starts in either Barbados or Jamaica. This goes to both Barbados (beautiful country, beaches etc), Jamaica, Antigua, St. Maarten (tax haven), Tortola (beautiful island), Curacao, Dominica (good for spices and flowers), Grenada (beautiful beach and spice), Samana (Dominican Republic), Trinidad (good shopping), Bonaire (quaint town) and Margarita (good for shopping, leather etc.). This is a very good cruise since you can get to see so much islands for your money.

All of these places are good to go to. This ship does not leave Barbados until 11:00 pm so you have time to sample some food from a good restaurant.

The best place to stay is at a Sandals Resort in St. Lucia. They provide the best service and amenities. One of the best parts is it is all-inclusive so all the meals, drinks and snacks are included in your package. There are three Sandals resorts on the island. We stayed at the Grande St. Lucian, the biggest of the three. We got the views of both the Caribbean Sea and the Atlantic Ocean.

It really depends on what youre after! With a bunch of kids I would recomend to take a cruise from port carneval and combinate it with a week or so in Orlando. From there you can choice either western or eastern carribean (or if you do both back to back). On eastern route I would definately recomend Nassau with Atlantis casino and hotell and theyre swiming with dolphin experience (Would be a boost if I do a carribean cruise.) On the western route Coruzmel in mexico has about the same. Another dream visit for me would be Jamaica.

So my top list:
Nassau
Port Carneval (with both the space center and orlando)
Jamaica
