I have been on many cruises and they all usually introduce to the passengers, either in the show room or the dining room, all of the major department heads on ship. These are people like the Housekeeping/Hotel Manager who is responsible for all of the staff cleaning cabins on ship. And the head chef who is responsible for all of the meals on ship. And the cruise director who is responsible for entertainment activities on ship. And then the technical people who actually run and guide the ship, the chief engineer, navigator, etc.

So without knowing what occupation you are interested in your question is really too broad to answer. But, for example if you are interested in managing hotel services you can go to any college that has a business administration and/or hotel management program. Or you could go to college and major in recreation and/or theater and be a cruise director.

However, before you investigate college I suggest that you investigate jobs. Use the cruise line web sites below. You need to know how much you can and will make on the ship in the occupation you are interested in. Colleges are expensive and you need to know whether your investment in formal college education will be of benefit for the jobs and whether your will recoup your expenses in college in the cruise industry jobs.

You may not need to even go to college for some positions and you need to know that and which up front.

its a good plan to talk to some of the cruise lines. they can tell you about requirements of each job.
schools which offer degrees in hospitality/hotel management. those degrees in a chef school. would be useful in some disciplines.

Tivogal is right, Hotel Management is the closer.
But for some positions, experience is more important.
When I started with Carnival as a receptionist, most of my colleagues did not have a college degree, they were all impressed with the fact that i had an university one.
Later i moved to the shops and there most people have no specific education either.
Same goes with the photo guys, casino, spa etc... but they all need training.
If you want to get into purser/reception and follow a career, eventually become a hotel director etc, got for hotel management.
just be careful with all those sites for employment with cruise lines, they are mostly scams to get your money.
Deal directly with the cruise line or the company that may hire you (in case of a concession, Hardings, Starbord, Steiner, Image link etc...)
all agencies ive met in 10 years are crooks...
so are the books for sale with tips from ex-crew members...

I guess it depends on exactly what you want to do. I mean do you want to work in the food service area? You could attend culinary school. Perhaps you would like to work in the service area....meaning clean rooms, etc....it all depends on what you want to do. If you want to drive the ship well, thats a whole different story. You could also work in the casino as a dealer and that doesn't require a college degree, so you need to give us more specifics.
