Carnival Cruise line's Ecstacy does 4 and 5 day cruises from Galveston and Carnival's Conquest Does 7 day cruises from there. In addition Royal Caribbean's Voyager of the Seas (a great ship) does 7 day cruises out of Galveston.

Carnival has two ships that depart from the Port of Galveston and Royal Caribbean has one ship that departs from the Port of Galveston.
Carnival offers a 5-day cruise on the smaller Ecstasy and a 7-day cruise on the larger Conquest. The Ecstasy visits Cozumel and the developing port of Progresso. This is a OK trip for those on a budget or to get introduced to cruising. The Ecstasy is an older, smaller ship.
The Conquest visits Montego Bay, Grand Cayman and Cozumel on a 7-day trip. She is a larger and nicer ship. You get a better ride on the larger ships.
Royal Caribbean recently introduced the Voyager of the Seas to the Galveston market. She replaced the awful Rhaposody of the Seas. The Rhaposody was the worst cruise ship that I have ever been on in 20 years of enjoying cruising. I understand the Voyager is a much nicer ship but we have not sailed on her yet.
Sailing out of the port of Galveston is pretty easy. However, a bit of caution...March is Spring Break for most Texas schools and sailings in March are full of families with all age ranges and the rates are peak season.
Friends of ours took the Conquest in February and got a really good deal.
Parking at the port is $10 per day.

The search engine allows you to search by departure port. You can compare the sailing dates but RC you will need to call to get the best rates on the RC cruises.
