So far the answers don't really speak to what I've seen. I'm sure it varies from cruise to cruise a little, but...well, club music is club music, no matter where you go.
Late night clubs on the major cruise ship lines (read: Carnival, Royal C, etc) play the types of music you'd hear in any club or bar, usually with a DJ spinning.
There are specialty nights (latin dance, kids-only, swing, etc) occasionally, and for certain hours of the evening, but by 11pm or so, you're in typical dance-club land.
