I actually just got home from Amsterdam last night. Coincidence!!!!
While there, I took a mini cruise using easycruise. The boat is extremely simplistic with no frills whatsoever. Look at some of the itinerary to see which one works best for you staying overnight in Amsterdam. I didn't stay on the boat in Amsterdam since I arrived the day before. I opted to stay at the Hotel Atlanta for a very reasonable price. It was located in a fantastic neighborhood and very central to everything.

We went with DFDS from Newcastle and stayed one night on ship then one night in hotel and final night on ship again - was really good and the price was good - check their website as they often have special deals - if you cannot travel to Newcastle then go into your google and put in ferries to holland - this will show which other companies have these cruises - I think you will find that most of them have the same kind of deals as DFDS - have a nice trip

Depends where you live but DFDS Seaways have regular cheap trips to Amsterdam from Newcastle
