The only cruise line that has ships with ice skating rinks is Royal Caribbean and the ships that have the ice rinks are their 3 Freedom Class and 5 Voyager Class ships.

The difference between the Freedom class and the Voyager class is the Freedom has the surfing simulator called the "flowrider" and the Voyager class does not. The Voyager class has the roller blade track and the Freedom class does not. The Freedom class also has a kid's water park area called the "H2O Zone"; Voyager ships do not have this but do have a great pool area.

The best cruise line to go on with kids is Royal Caribbean. It has the most on-board activities for kids and the other cruise lines cannot compare. Royal Caribbean is also a cruise line that caters to young cruiser and families. It has things like ice skating, roller blading, mini-golf course, a full sized basketball/tennis court, the rock climbing wall, and on the new Freedom Class ships the surfing simulator, the Flowrider. It has an area on its ships called Adventure Ocean which has free programs for kids of all ages between 3 and 17. It has a special teen disco area that is open until 2:00 AM each evening. The RC ships that you should look for cruises on are the RC's Freedom Class and Voyager Class ships. You can look at the features of these ships on these two web links:

Freedom Class:
http://www.royalcaribbean.com/findacruise/ships/class/home.do;jsessionid=0000FJbXzs6RK1qxc2KrePFz3Zj:13hldio7n?shipClassCode=FR&br=R

Voyager Class:
http://www.royalcaribbean.com/findacruise/ships/class/home.do;jsessionid=0000FJbXzs6RK1qxc2KrePFz3Zj:13hldio7n?shipClassCode=VY&br=R

If you want a cruise to Mexico then you need to book a cruise on the RC's Mariner of the Seas which will begin sailing the Mexico itinerary out of LA this Spring. We sailed on the Mariner out of Florida about a year ago and it is a fabulous ship that your kids will enjoy.

If you want to go to the Caribbean you can go on the Voyager of the Seas out of Galveston, Texas: http://www.royalcaribbean.com/findacruise/search/vacationSearchResult.do;jsessionid=0000FJbXzs6RK1qxc2KrePFz3Zj:13hldio7n?cruiseTourOnly=false&cS=QVS&date=ANY&dest=ANY&port=ANY&ship=VY&state=&x=37&y=8

OR, the Adventure of the Seas out of Puerto Rico: http://www.royalcaribbean.com/findacruise/cruiseDetails/itineraryAndPricing.do;jsessionid=0000FJbXzs6RK1qxc2KrePFz3Zj:13hldio7n?packageCode=AD07D028&date=ANY&selectedCurrencyCode=USD&promoType=&hasSenior=&hasMilitary=&hasFireandPolice=&state=

OR, the Explorer of the Seas out of Cape Liberty, NJ: http://www.royalcaribbean.com/findacruise/cruiseDetails/itineraryAndPricing.do;jsessionid=0000FJbXzs6RK1qxc2KrePFz3Zj:13hldio7n?packageCode=EX09L026&date=ANY&selectedCurrencyCode=&promoType=&hasSenior=&hasMilitary=&hasFireandPolice=&state=

All of the kid's activities on these ship are free and included in your cruise fare. These ships also have a free ice show (like the Ice Capades) that is great.

Royal Caribbean is the best with the most activities. If you go on the Freedom class ships they will have ice skating, flow rider (surfing) rock climbing wall and much more. Call me for help as I am a cruise agent.
