This really depends on what kind of a person you are.
Historic and Cultural person - take the Indian culture exursions. Go to a bake salmon type adventure. Go see the a native play that includes a traditional native america dinner.
Adventurous - Take a heli up on to a Galcier for a hike. Take a dog sledding excursion to meet the pups and ride a dog sled.

Juneau, AK...you can go water rafting. I was nervous at first, but the rapids are only about 30% of the journey. It's on the Medenhal Glacier/River and it is just amazing. There are about 10 people in the boat and only one licenced guy/girl rows the boat. SO much fun!
