Well i know exactly what i'd be doing if i was going to Amsterdam! Get down to a coffe shop and take it from there.

try thr red light district, lol just for a laff, museum's are good, wether you go by plane or ferry , pick up a whats on guide, i find them quite useful

Try the Van Gogh museum. If you like art you will get a great view of his art and life.

It depends of course what you like. If you want to see 17th century art: it's Rembrandt year in Amsterdam, so go to the Rijksmuseum - unfortunately the original building is being restored now, so you can only see the top 100 paintings of Rembrandt and other famous Dutch artists from the 17th century.
van Gogh museum: see all the famous painting of him you saw in you art book at school
The stedelijk museum (stedelijk = of the city). See the painting: "who's afraid of red yellow and blue" and see that you really dash back when you enter the room it is in (google for it)
not interested in art: Anne Frank house, see where see lived over three years, and be astonished how really small all rooms are to live with size people, especially if you're a teenager and can never go outdoors.
See the 17th century center of the city, more then 1000 houses and other buildings of that period, a lot really rich decorated, but also a lot build for the poor. See the 17th century city hall - now the royal palace on the Dam: it was built to show the world that the bourgeois was richer than nobility.
For fun: in the evening walk through the red light district. Quite different than everywhere else in the world: in AMS it's not a gloomy dangerous district of alleys, in the evening it's lively lot'sa people (probably tourists like you), very open prostitutes. It's nice if you sit in a bar and one comes sitting next to you, not to earn money, but just to have a break and a beer. Have a short chat with her, telling you're on holiday. Ask if her job is difficult. Really MEET people who'd you normally wouldn't dare to speek to, but because it's so friendly and open, it has nothing of the dangers you see in other districts like this in the world.
If you're a foreigner, you must of course do a canal tour. Try to ride a bike. There are more bikes in the Netherlands then people.
Well, and if you really must, of course you can get stoned. But I'm not sure if that would be a such a special experience. I think I have this attitude because it's allowed here, nothing kinky about this. Maybe therefore we have the same attitude as to tobacco: if you really can't live without it, but in general it's not a good habit (understatement)
Finally: don't go to Volendam, there's nothing left of the original village anymore

There's lots of museums and the Anne Frank house is a must. Also check out Madame Tussauds. If you're staying in a hotel the front desk will have plenty of info on where to go and what to see. Have a good visit and enjoy!

September 2 is the Seven Bridges festival. They place a stage in the middle of te canal and have bands play all day. Mostly world music and jazz. It's a really chill way to spend the day though.

first stop by one of the VVV (that's v v v) tourist offices and see if there are any special events. VVVs are located at Centraal Station (2 one inside and one in front) and on the Liedspelien(sp?)... you can always count on the -incredible- museums. I like the Rijksmuseum for it's old masters but lots of folks like the Van Gogh or the Stedilijk... the Amsterdam City museum is cool too, the Resistance Museum is neat but a bit out of the way and mainly in nederlands (ask at the desk and they'll give you an english language handout)..

September is one of the best times to go... nice weather and most of the tourists are gone so lines are shorter.

Also worth visiting is Boom Chicago... a funny improv show and they produce a great (free) little magazine with lots of current info

There's so much to do in Amsterdam, you definately won't be bored. I agree with the other posters that Ann Frank's house is a must. They re-did it a couple of years ago and now there's so much more to it, its brilliant. A good starter would be to get the canalbus, just on your right as you come out of centraal station, its actually a fairly cheap and picturesque way to get around the city, jumping on and off whenever you feel like it for museums etc. All the tourists are concentrated in a triangle between Dam square, central station and the red light district, if you go further than this you wont find as many. Nieuwendijk is a nice road to walk along, with shops at one end and bars, coffeeshops and eating places at the other. Definately go to Leidseplein in for some al-fresco heineken in the evening (should still be nice in the evening). Foods not great in that area, I wouldn't recommend it, but its a fun place to hang out usually with street performer and stuff. Feels a bit like soho in London. I like the area of Spui (tramline 1 or 2) and de Pijp, much less tourists and some really nice cafes by the canals, and antique shops and book shops etc when you want to get away from the crowds. If you go to the heineken experience (the brewery, which is a lot of fun), walk around the back of it a couple of blocks to Albert Cujp market for the real amsterdam. Its a big long market in an area with lots of surinamese, antilleans and moroccans, so some interesting food to try (I love surinamese food) and clothing if you want to pick up something unique. Yeah, I guess thats about it. Walk around, get lost, enjoy :) Its a fantastic city, but obviously with a bit of a seedy side. To really enjoy it, try and stay open minded til the end of your trip. A lot of people decide they hate it after 5 minutes and then really fail to enjoy the rest. And my most important advice of all, come to my city of Utrecht, 30 minutes by train for the day. Its gorgeous, you wont regret it. Have fun ;)
Ps. Try kibbeling, fried white fish pieces with that delicious garlic mayo stuff mmmmm.

Good food everywhere... but warning, if you want frenchfries, make sure you ask for them with ketchup, otherwise you get mayo served with your fries.

I always asked for ketchup and they looked at me like I was insane, but its better than mayonaise
