It really depends on what you're interested in seeing. Each city is different. So I can't really advise you without knowing what you're looking for.

You could also combine Athens-Thessaloniki-Istanbul, as Turkish above me has suggested, and divide your time as you like.

I recently spent 6 days in Athens as part of a twelve day tour and am considering returning next year. Loved the people, scenery and food. The traffic sucks, but that's true in any big city anywhere in the world.

I live in Athens, and been to the other two cities. By far my favorite is Istanbul, or Konstaninopouli however the Greeks like to call it. Athens and Cairo are amazing, but there is just something magical about Istanbul that can't be found anywhere else in the world
