Nothing. It;s just the name of the currency.
It wouldn't work as an acronym in all the languages of the E.U.

The "R" and "O" doesnt stand for anything. It is the currency of the European Union used in 15 member states (Austria, Belgium, Cyprus, Finland, France, Germany, Greece, Ireland, Italy, Luxembourg, Malta, the Netherlands, Portugal, Slovenia and Spain).

It's just short for European Currency Unit, I do believe. I think they were going to call them ECUs for a while, but it just doesn't roll off the tongue so easily.

The word Euro is not an abbreviation or acronym; it was just made out of the abbreviation EU (European Union), with a syllable added that makes the word pronouncable in all European languages. Still, the "eu" in Euro is pronounced different in different countries. A German "eu" sounds different than a French one, and both aren't similar to the English pron "yoo-row".

For the smaller currency unit, they had no better idea than calling it "cent".

What Orla wrote about the ECU is partly right: The "European Currency Unit" was introduced as "book money" to ease international transactions. But ECU (mostly pronounced the French way, "ay-koo", but the "oo" being actually like the German umlaut-ü) being hard to pronounce, they had to find another name when the euro was introduced as legal tender (cash) for everyone to use.
