If we leave the hundreds of famous ancients for the History books, and the modern day sea lords, one modern Greek with very significant contribution to humanity is Dr. Pap or Dr Georgios Papanikolaou (1883-1962) who invented the Pap-smear test to detect cancer of the cervix in women and it is still being used with no appreciable differences.
