I would say Skiathos , Syros , Skopelos..

Last year i went to Potos, Thassos, which was great cos there is a decent amount of restaurants & nightlife but it still has the traditional Greek Atmosphere. We stayed in Maria Apartments. Thassos is a quite quiet island & not too touristy, you will have to get a boat from the mainland though cos it doesn't have an airport.

Why dont you try Zakynthos? Im going there this year on 7th June, weather looks lovely and same with the beaches, there is one part there which I see is full of clubs and bars etc but theres a few other, quieter resorts around to choose from!! =)

If you do not want to get involved with p*ssed 18 year olds do not go to Kos. There are scores of islands to pick from :
Paros
Syros
Rhodes
Samos
Lesvos
Skiathos
Zakinthos
Lefkada
Corfu
etc

my favourite holiday destination is Rhodes town the hotel i like there is usually booked up ten twelve months in advance this is the Athena Aparthotel, with kosmar holidays, just have a look at the brochure on line at the hotels and the availability, there is also Olympic holidays,both of these do reasonable priced holidays,and can be booked on line or at the travel agents, hope this helps, happy holidays.

zante tsilvi been twice great beach great places for food and a bit of life try the tsilvi beach hotel its on the beach they have horse and carriges as well not far from the airport and great weather i went in july very hot and the locals cant do enough for you

I thought Kos was great as well.
Try Crete or Rhodes.
I stayed in Sidari in Corfu last summer. Plenty of lively bars in the centre and a quieter area if you want an easy night.

I went to Zackynos (sp?). I hated it, but my cousin loved it. There were tons of Brits, Germans, and Italians. There were lots of families, including ones that like to keep young children up until the wee hours or let them make as much noise as they want in the am. The families enjoyed dining for HOURS, which made it impossible to get in for a meal if you didn't arrive by a certain hour. Later, I realized why they just hung out in the restaurants- there was nothing else to do and most of us were without air conditioning. There was nothing ancient, interesting, or beautiful; everything had been destroyed in an earthquake 50 yrs. earlier. It was miserably hot, and no attention had been paid to the local flora. I would go to Cancun, Mexico any day over Greece.

Try going to the Ionian islands or even Parga or Sivota,in Epirus.Yia sou.
