Ohh, there's so much good clothes in Paris!!

Paris is like.. The number one place that sells beautiful clothes! I suggest buying her a wardrobe-- I mean, clothes. :)

Or, some shoes? Rings? Accesories, at least?

No-no
Last year I went to Paris and I saw a lot of sellers on the streets, I bought my parents some oil paintings. You can buy impressionist paintings for as much as €20. I also went to the Louvre and bought some 'souvenirs' from there - pens, postcards, magnets. There is a shop in Champs Élisée with stuff about 'Le Tour de France' - hats, pin badges, magnets, t-shirts, etc. Inside Eiffel tower you can buy things too - chocolate boxes, key chains, pictures' frames, etc.
You can also buy her some French wine and cheese to go with the wine.
Once you get to Paris, you will see loads of stuff, the difficult part is to decide what to buy her. ;-)

EDIT: Ever since this question was posted I've been trying to remember the name of the famous fashion galleries in Paris Lafayette in Boulevard Haussmann. I didn't go there, because fashion is not my thing, but my friends were all very excited about it and bought some things from there.
And if you are going to send some postcards, make sure to buy one where you can see an areal shot of the Boulevard that connects Le Louvre, the Triumph Arch and La Grande Arche de La Défense which was designed by Otto von Spreckelsen and completed in 1989, for me this was a major highlight in Paris. These 3 elements are quite relevant for Parisian urban planning.

Take those small keychains and keyrings that have the Eiffel Tower. They are cheap to buy (EUR 1/ piece), easy to carry and signify Paris.

The one thing I regret not buying in Paris is a crepe maker type pan. The things I would buy again are: natural soap (made in Provence or locally), French herbs for cooking (because you can use them for years), perfume, but not what you can get here - last time I bought essences in Eze that lasted me for 5 years and were very inexpensive.

I still have the key chain and I think it's a good gift. I still have some paintings that will remind me of that time in my life forever.

The cheese is a great idea. It's just that the dept. of agriculture will give you grief about it and take it from you. The wine works.

jewelry.

bracelet or earrings. Or a cute pendant/charm...

Very in-expensive t-shirts with the word "Paris" in cursive, available on the road at the South side of the Louvre. It looks like an old market, with plenty of small stalls outside.

Or a nice miniature Eiffel Tower!

Or more expensive: a can of "Foie-grass" (duck-liver delicacy!)

Wine?
