I recommend rugs, leather (cheaper here) as the standard tourist stuff. I also bought some tapestries and a glass mosaic chandelier.

There are two famous touristic places on Sirkeci, Istanbul :
Kapali Charshi and Misir Charshi. You will lose your eyes there, chosing for souvenir :)
Good luck!

People will give you lots of answers and places to buy them but I will give you a very tried and true answer guaranteed to save you lots of money, make for easy packing and make a big hit if given to people back home as a gift.

What you want to look for, there are many of them available is beautiful cloth mouse pads that look like expensive turkish carpets. They come in many patterns and lots of colors so you can give them to lots of people with all of them being different.

They are so easy to pack in your luggage, they don't cost much and they will last for a long while. Truly a memorable gift.

If you want a more upscale gift, send back beautiful chai (tea) sets, many are very elaborately decorated, they are authentically Turkish and a beautiful gift that will be prized by all who receive them. They are less expensive than leather goods or turkish carpets which are very overpriced.

Spice packets from the Spice market are always appreciated and also easy to pack. They come in attractive assortments.
