I don't know about the Pakistani flag, but let me give you some idea about the Turkish flag:
Meaning of the flag
It's very difficult to explain the real meaning of a flag; there are legends, actual stories, and outright misinformation about the reason of certain colors or designs were put on national flags. Also individuals may have their own interpretation of their own national flag. Religious symbolism can also be expressed via color, such as the crescent moon which is a traditional Islamic symbol.
Historical facts:
"Red has been prominent in Turkish flags for 700 years. The star and crescent are Muslim symbols, but also have a long pre-Islamic past in Asia Minor. The basic form of the national flag was apparently established in 1793 under Ottoman Sultan Selim III, when the green flags used by the navy were changed to red and a white crescent and multi-pointed star were added. The five-pointed star dates from approximately 1844. Except for the issuance of design specifications, no change was made when the Ottoman Empire became the Republic of Turkey and the Caliphate (religious authority) was terminated by Ataturk. Many traditions explain the star and crescent symbol. It is known that Diana (Artemis) was the patron goddess of Byzantium and that her symbol was a moon. In 330, the Emperor Constantine rededicated the city - which he called Constantinople (today's Istanbul) - to the Virgin Mary, whose star symbol was superimposed over the crescent. U see where is this design comes from, other hand some answerers telling the truth. Crescent and star design was a Ottoman Empire’s flag, many country copying it from them .. incluted Turks.
But that design doesn’t belongs Ottoman’s, they took the design from Byzantium Empire when they fall, they use it at the coins and flags because honour the moon-goddess Hecate.
In 330 AD first Christian Empire Constantine added the Virgin Mary's star to the flag .. after that people can see moon goddess and Virgin Mary at same scene, at a flag.
.. If u look at ancient Byzantium flag u can see it with your own eye’s .. today we still use Byzantium flag, after 1000 year.
The crescent moon and star was not completely abandoned by the Christian world after the fall of Constantinople. To date the official flag of the Orthodox Patriarch of Jerusalem had those signs.
Crescent and Star invated by Byzantium, Ottoman’s took it from them and other muslim countries took it from Ottomans. Sounds like a olympic flag race isn’t?

we use red, color of human blood .. we aren't islamic country, a secular one. we are turks first, then muslim or jew .. turks first.
We draw our history with blood, we had a soil to live .. because we paid the bills with blood. That's why our flag had red color, not green.

The recent Turkish flag have been using about 900 years by turks since ottoman empire established. Moon and star represent İslam ,thats why they decided a flag like with moon and star..the infuence of ottoman emprire effected the whole islamic world just like pakistan so they had a similiar flag.
