I have been asking and researching the same question for a trip this Spring. Answers I have:

1. Flavigny located SE of Paris - where the Johnnie Depp movie 'Chocolat' was filmed.
2. St. Emilion in the Bordeaux wine region.
3. Rieux Minervois in Languedoc.
4. Saint Michel D'Euzet near Avignon.
5. St. Cirque La Popie in the Mid-Pyrenes.

collioure, cote vermeille (red coast) of france- one of the most beautiful of the many coastal towns on the cote vermeille near the border of spain.
mont st michel, normandy - beautiful monastery on island
i couldn't pinpoint any others.... basically any small town in the south of france is delightful, particularly in the provence, languedoc-roussillon, and pyrénées-orientales regions.

I love France (hate paris though) I don't know much about it but I have been to Lourdes which although it has 15000 residents has 5 million tourists (the virgin mary appeared here 150 years ago) I liked it but it may not be what you are looking for, I have heard great things about Saint Paul de Vence and I would love to go to Pont-Saint-Esprit which is where Jackie O's (my idol) French ancestors came from, Sisteron is supposed to be very beautiful too. Cassis too. Hope that helps! (Sorry, I have a preference for Provence!)
