Are Visa debit cards accepted in France?

Im hoping not to use my Amex card, but instead use my Visa.

Yes. In France. You could not use a Maestro at merchants but you can use your Visa and/or MasterCard debit card at Merchants. However, they treat all cards as a credit card and they will be minimum purchase requirement. Spain should also accept them as a Credit card or even as debit card. They may even work at merchants that take the visa delta card. Notify your bank that you will be traveling to these countries. So the bank will know that the transactions you make are not fraudulent charges.

My Mom got a Visa, she can pay in restaurant, in supermarkets, withdraw cash and have it stolen ... like any other credit card with a chip.

What we dont have much is France is "cash back" and credit card were you pass the card in the machine and sign the ticket. My girlfriend can do this in Paris supermarkets, but not in restaurants.
Most of the time, we use the chip with the code.
