Stay at this hotel: it's cheap and clean, on a train/metro line you can catch at CDG.

You can walk to the Louvre and spend half a day (buy ticket on line ahead and avoid waiting in line).

Go to the Eiffel Tour for an hour.
See Notre Dame Cathredral and walk around the surrounding area.
Stop to eat at a cafe.

The Louvre, Eiffel Tower and Notre Dame are short metro rides from your hotel. In the evening, enjoy a stroll down Champs Elysees and see the Arc d'Triomphe.

In than 1 day, it will be very difficult...
As "calvin o" said, You must take the subway call "RER" to the station " saint-Michel" (40 mn) and go to visit "Notre dame" on the i"L'ile de la Cité" Island ...
Then I suggest you to take the Batobus on the Seine : with one ticket, you can travel easely and visit all the main monuments (La Tour Eiffel, Les champs Elysées etc).

I think you can barely manage with less than 1 day. Take the RER B train from the airport to drop off at St Michel. Across the river is the Notre Dame on an island in the middle of the Seine River. You can explore the historic district on foot. Next you can either take the RER C train west bound from St Michel station to drop off at Champ De Mars Tour Eiffel station for the tower, OR if you traversed the island to the far bank, take Metro line 1 west-wards from Chatelet station to Champs Elysees. I think the Notre Dame and either 1 of the latter 2 excursions will pack your short day. I assume this is your first visit. Check out the transport map I attach below.

What do you really really want to see?

I'd say take an introductory bus tour of Paris...that way you can see the main sites. You can take the tour with Paris Vision or Cityrama. Both are located on Rue de Rivoli, across from the Louvre and Tuileries Garden.

Cityrama also offers a hop-on, hop-off bus tour which may be what you're looking for. Hop off to snap a few photos of a major site and catch the next bus.

This is just what I would do, but I'd have to take the bus tour and then go see the Eiffel Tower (not necessarily go up since it may consist of most time spent standing in line), Notre Dame and the Louvre. Also, grabbing a bite to eat at a great cafe or restaurant. Doesn't have to be anything too special...some of my most memorable meals have consisted of a croque monsieur at a charming little cafe near Notre Dame.

Take the bus from CDG airport (8.50 euros/ticket-every 15 min.) and it will stop just near the Garnier Opera (wonderful building and inside too).From tihs station you can take the open bus (there are 4 lines with connection between them) and during 4-5 hours you can see almost all Paris.During the left hours you have, you can do a walk trip along the Seine, visit inside the Notre Dame cathedral, visit the Eiffel Tower, visit the Montmartre quartier with Sacree Coeur basilique, visit the Latin quartier or just relax in the Luxembourg Gardens.I wish you a wonderful day and I'm sure you'll come back to see, step by step the whole Paris.
