Those are the sort of dishes you will find in most cafes and bistrots in Paris. Any chef in any cafe in Paris who can't do those things well will be summarily taken out and hanged from the nearest tree.

Au Père Fouettard 9 rue Pierre Lescot (1st)
La Rose de France 24 Place Dauphine (1st)

croque monsieur in allmost all cafe, i'm not sure you'll find croque monsieur in restaurant cause it's mre lik a sandwich. Boeuf bourguignon no idea in a restaurant bourguignon. it's more a familial dish as the soup

I had Croq-Croq at Cafe Very in the Jardin Tuileries and it was wonderful. The onion soup at Au Pied de Cashion is supposed to be the best. Bon voyage and bonne chance!
