You can take a look at many of the major sights in one day but it's clearly not possible to see all of the Paris sights in a single day.

In one day, I would go to Nôtre Dame, and then take the Métro to the Eiffel Tower. Maybe, for the evening, I would stroll through Pigalle, and go past the Moulin Rouge, (but you need to realise that Pigalle is not the nicest quarter to stroll around alone).

You wont see everything of course but you can see the main sites by staying along the River Seine. I would strongly suggest you go to any of the following:
Louvre, Eiffel Tower, Notre Dame Cathedral, Musee DOrsay. Once you're there you can buy a bateaubus pass. This a a hop on hop off pass and takes you to all of the above sights and many more. You just pay for a one day pass which is only around 10 dollars, an you hop on the boat, get off at the stop you're interested in. It also stops at the Champs Elysee (an Arc do Triomphe). Jardin Luxembourg and a few others.

Rillifane is right. You can take a bus tour and drive around the city in one day sure. But to really see it would take almost a week.

You've probably heard of the Louvre museum? You know - the place where the Mona Lisa is? Well that museum is so huge you would need a full day for that ALONE.

Places:

Montmartre
Sacre Coeur
Eiffel tower
Napoleans tomb and war museum
Latin quarter
Nortre Dame
Jardin du luxembourg
Tuileries
the sewers (it is tour I'm not kidding - and yes IT IS worth it)
le marais
musee d'orsay
musee rodin
champs elysees

And I'm just scratching the surface.
