Paris has some of the nicest (and most expensive) hotels in the world.
Now if you don't mind paying more than 700 euros a night for a hotel room then there are some fantastic places to stay. These include:

Now assuming you are not an heiress or married to a millionaire then there are more rationally priced choices.
The Hôtel Left Bank St. Germain is a charming little 3 star hotel with all the amenities and in a very lively area of the 6th arrondissement just steps from the Odeon metro stop and within easy walking distance of the Seine, Notre Dame, the Cluny Museum and a host of other sights. http://www.leftbankstgermain.com/

Been there a few times and the best one for me was the Intercontinental Le Grande Paris. The ceilings are incredibly high and even the cheapest rooms have a wonderful view of their garden. The beds are so soft you will melt and its very clean. All the rooms have a music related theme due to its position near the Opera Grandier (which some rooms have a view off). It's basically 5 minutes away from the Louvre and its in what can be called Paris's theater district. If you want to do some shopping it's right next to the Lafayette Gallery which is a huge shopping mall and even has a food store so incase you get thirsty you don't have to pay 10 dollars for a can of soda. |

Hotel Regina. It's centrally located and near the Louvre. It's also very pretty (and pricey). If you do stay there, just down the street there's a restaurant called Angelina. Make sure to go and order a chocolat chaud (hot chocolate), but the brown, not the white. There famous for it. They also have a lot of very tasty pastries. There's also a smaller, less expensive hotel in the 6th district called Hotel Madison. That one is near St. Germain des Pres and the Latin Quarter. If you stay there, make sure to visit Les Deux Maggots cafe. Very famous. |

If price is no object, then you've got many, many to choose from.
Personally, my favorite is Le Bristol. It's quite expensive to stay there, but it's absolutely incredible =]
