Can anyone recommend one of these 3 parisienne hotels?

i have the following shortlist:

- Hotel Grandes Ecoles, in the Latin quarter

I know both the Hotel des Grandes Ecoles and the Hotel St. Jacques. They are both fine places and both are nicely located. I am not familar with the Hotel Sevigne.

If you are looking for something less expensive then the Hotel St. Andre des Arts (89 euros for a double including breakfast and taxes) is where I usually stay when I'm not renting an apartment. http://www.123france.co.uk/en/0/hotel-saint-andre-des-arts-paris_486_en/index.html

The St. Andre is a very basic place without elevators, internet connections, TV, or minibars. The rooms do have ensuite shower and toilet but that's about all by way of modern amenities. But its friendly, clean and well located.

I stayed in this one last year. nothing much to the hotel, typical budget hotel but was cheap, great room and its the location that made it so great. It says it in a great location but seriously I'll use it every time I go to paris. Its right beside one of the main metro stations chatelet. highly recommended!

Sorry, I'm not familiar with any of the three hotels you listed. However, here are some notes from my visits:

I stayed for two weeks at the Hotel Magendie, which is near the border between the 5th and 14th arondissements. It's convenient to 3 metro stations and multiple bus lines. I think the rate is about 65 euros a night, depending on when you're going and the type of room you get. Breakfast may be included, I'm not sure anymore.

The rooms are small but comfortable enough considering most people don't travel just to sit in their rooms.

On another trip, I stayed in Appart'Valley Austerlitz. It is half a block from Gare d'Austerlitz. The advantage of this place is that the rooms have small kitchens, so you can economize by preparing dinner at the hotel and splurge on nice lunches out. That was my strategy, anyway.

If you're traveling with several people, I'd recommend looking into renting an apartment. That would be much cheaper per person than staying in hotel rooms. There are many rental websites. The only caution I will give you is not to pay more than a small deposit before you see the apartment and have the key.

You'll be lucky, the best value hotel we found was 400 euro a night. It was nice though.
