Most don't, but there are exceptions. On the Champs-Elysées for instance, Virgin Megastore and FNAC are open 7 days a week, until midnight if I'm not mistaken.

Not all of them - but in the main touristy areas such as Champs-Elysees most of the big stores are open. Also, the tourist trinket shops will be open and some small food shops, especially in the morning.

In france, shops legally have the right to open on sundays only if they provide services or goods that responde to a "vital need" (restaurant, some supermarkets...)or if they have an entertainment purpose (cinemas..)
Though you have shops that open illegaly (like downtown paris, all the lux stores) . Outside the city, you have big malls, plenty of shops, they open on sunday, some of them legally, and others not .

Sunday is an off day for everyone in France in general, but of course some shops still open. Although usually most people want to rest that day. ( I am French, lol I know)

Certain areas of Paris, mainly the touristy ones, allow shops to open on Sundays. Of course, there are plenty of exceptions breaking the rules.

Expect this to change as it was one of the issues that Sarkozy wants to address.
