I am not sure what your budget would be, but if you are in the market to spend about $200 a night, you would enjoy staying in the Hotel d'Angleterre, which is located on the Rue de l'Universite on the Left Bank, a few minutes walk to the Tuileries. It used to be the British Embassy and is absolutely beautiful. The neighborhood is really neat too...St. Germain des Pres. I would also recommend Hotel de l'Universite, located on the same street. Both these hotels have three stars.
If your budget is a bit less than that, the Hotel Pasteur is a good option. It is located right next door to the Institut Pasteur and has two stars. The neighborhood, located in the 15th about ten minutes from Montparnasse on foot, is residential and not terribly pittoresque, but very French. The hotel is charming and the streets are quiet.
A good area to look for hotels would be Rue Cler, near les Invalides.

I don't concur with sarge at all. Our recent trip to Paris proved that the Parisians were nothing but friendly and helpful. The best tip? TRY TO AT LEAST SPEAK ANY MINUTE AMOUNT OF FRENCH THAT YOU CAN. They greatly appreciate the effort and reward you with their humor and kindness. My training was in Spanish so I would at least try and make up french words which caused them to laugh and we'd all have fun with it.
The Hotel d'Aires is my recommendation. It's close to everything: Eiffel Tower and public transportation but away from most of the tourist areas. Charming.
