Of course DisneyLand Paris (east of Paris) is probably the best one. http://www.disneylandparis.com

I would add Asterix with the same kind of attractions: http://www.parcasterix.fr (North of Paris)

For young children and babies I will pick up Nigloland http://www.nigloland.fr (near the city of Troyes) which is far less spectacular but rather small, quiet and with slow attractions suitable for very young children...

Futuroscope is specialised in high tech attractions around multimedia, sciences, computers, such kind of thing... http://www.futuroscope.com

Two suggestions:
1. Futuroscope, Poitiers - theme park of the moving image.
Very busy in school holidays.
2. Puy de Fou, in the Vendee. Very difficult to describe so I suggest you look at their website (Google:puy de fou). Without a doubt it is the best theme park I have been to in France. By day a historical theme park with conservation overtones; at night - the most spectacular son et lumiere you will ever see with a cast of 1800 in the grounds of a ruined castle. Brilliant. The performances are limited so book in advance (on-line) and if you do so then buy headphones as well so you can tune in to the English translation of the script.
