Since you will be going to Paris during Christmas, I highly recommend attending Mass at Notre-Dame Cathedral during Christmas Eve. The Mass starts around 11pm, but the line in front of the Notre Dame cathedral forms around 8pm. It's very cold though and maybe wet, be sure to dress warmly and bring an umbrella. Get there early otherwise you will miss out. Notre-Dame Cathedral during Christmas Mass is even more special than usual. Last time I went there, the choir hidden behind the altar sang "Silent Night" in French. The sound echoed through the whole Gothic church magnificently. It's like the sound from heaven. If you can, sit down one at one of the chairs near the altar and then go to the Louvre Museum later and check out the picture of "Napoleon Crowning Himself at the Notre-Dame Cathedral." It's like you are one of the attendees in his celebration. It's simply one of the most memorable experiences of Paris you will ever have for years to come and best of all, it's free. Actually there is a very famous person (I forgot whom since I read quite a long time ago) who said that he decided to convert to Catholicism after attending the Mass at Notre Dame Cathedral during Christmas. Getting home to your hotel after the Mass can be a problem since it will be around 1-2am when you are done, but there are nightly buses running around the city. If your hotel is nearby, you can just walk home. Another attraction during Christmas is walking down Champs Elysees at night which has beautiful light hanging from trees, you can also walk over/catch a metro to Eiffel Tower from there. Hope this help! I live there for awhile and have come back numerous times. People already gave you the "great stuff".

Out of the classic parisian style, I recommend the Beaubourg museum (near Châtelet - Les Halles M° station) for contemporary art and the Arab World Institute near Jussieu M°. There are great exhibitions and you can try mint tea with loukoums.

You have also an interesting Judaism Museum 10 minutes walk north of Saint Paul M° station, in the jewish old quarter and near the gay quarter (there you can eat yummy falafel sandwich). I think the Shoah memorial is located in the museum (not sure).
The style of streets could be interesting for American since you have an old style, different from "grand boulevards".

(M° = metro)

Near Pigalle M° and Blanche M° are the Moulin Rouge (not really big) and peep shows. There is located the erotism museum too (not that interesting according to friends, but well, we never know). It is not that far from Montmartre Sacré Choeur.

i was there in november last year. be sure to bring jacket and umbrella. my favorites are eiffel tower at night, and sacre couer (the white cathedral). but best is just walking the streets and seeing what you find

I went years ago...
In Paris my interests led me to Musee d'Orsay- an art museum mostly of impressionist artists like Monet, Manet, Renoir, degas, lautrec...etc. Very amazing to see these works of art in person.

Le Louvre...have good walking shoes and a lot of time... worth it to see famous paintings and other historical art like the Mona Lisa.
Check out Notre Dame cathedral very impressive.
Those would be my choices to visit (again).

Go on Yahoo-Travel-Paris and you'll find the "must see" places and you can choose. But, during the winter holidays, visit the city just walking and you'll find by yourself the beauty of Paris. Bon voyage !

I'm going to Paris during the new year. I've never been but I know I'm visiting Notre Dame, Versailles and the Louvre (not sure I spelled it right). There's also the Effiel Tower of course and Moulin Rouge. I took a class on French history so I have a list of all the places in Paris I have to go to.
