How many champagne houses can you tour in reims in one day?

There are at least ten in Reims. Here is a list: http://www.reims-tourism.com/Accueil/Champagne/Lesgrandesmaisonsdechampagne/tabid/3374/Default.aspx

The first champagne city is not Reims, it's Epernay. Which is average 50kms at the south of Reims
Here there are Mercier, Moet et chandon, perrier jouet houses.
Mercier house has got the biggest cave in the champagne valley

Go to Reims or Epernay or both - then go to the local tourist office - they'll give you all the adresses -

But listen to me - if you want to buy champagne don't buy the most expensive - some local producers can propose it from 20 $ a bottle, very drinkable -

Check this site, it's the best for locating each house on a map:
http://www.maisons-champagne.com/traduction/english/visites_caves/visites_caves_sommaire_gb.htm

Although I haven't been wine-tasting there, my experience of wine-tasting is that 3 houses/cellars a day is a maximum. I would also visit the city and end the day in a great restaurant. Rushing is against the spirit of wine (either making it or enjoying it).

Personally I would check the details of each and try to select 3 places that are very different by the type of champagne they produce but also by the type of tour they propose. Otherwise it gets repetitive. But everyone's different, it's my own personal preference (some people can watch 4 movies in a row in one day, I can't, I like variety). If you are different from me, then visit as many as you have time to.

If you have a car then I would suggest not staying just in Reims (great cathedral of high historic significance) but drive around the whole Champagne region, the wine estates are not necessarily in the cities. Seeing the vineyards is part of the experience. But if you have to rely on public transportation then try to spend one day in Reims and one day in Epernay.
