I'm going to Toulouse and Paris in France for three weeks, what can I do there?

I'll be in Toulouse for two weeks before going to Paris for the last week and of course I've read all the travel books but they can only tell you so much. So anyone who's been to these areas, or even lives around these areas what are some activities or destinations or amazing sights or good walks or great tours. Any art gallery's? Really anything. But I don't really like doing anything too touristy with alot of tour guides and structure, having said that I realise that I am a tourist and some of that is simply unavoidable so don't let that limit your answers. Also any links to the organiser's website if possible would be great.

about toulouse, i guess you have plenty things. do not forget to take a drink in Saint Pierre place, eat in le Père Louis, or in le Bibent, and take a coffee in the Florida (outside but also inside). for 12:00 lunch, you have to go to the Marché Victor Hugo restaurants (on the 2nd floor, of the building of the market).
you should go to little cities around toulouse. my favourites are:
- Albi : ssthg like toulouse + Cordes sur Ciel
- Carcassonne: wonderful medieval town + the Canal du Midi
- Moissac : beautiful closter
- Andorra : a little country in Pyrenees mountains + Foix.
- the la Clape near Narbonne, with the sea not so far.
- Auch + little bastides : the best place to buy some products.

I don't either like doing touristy things but sometimes it is worth it.
I lived in paris for 3 years and recently visited (I am french living in the us) and I really enjoyed having a picnic in the versailles gardens (which are free, only the actually castle was paying, but is is kind of a half day trip). I usually just take walks around the tuileries or Montmatre/17th in the less busy streets late afternoon when tourist are leaving, and around the seine and then grab dinner around there. (although try to plan ahead where you eat cause being a mix of very touristy and trendy location, you don't want to take chances..)

I enjoy checking out concerts at Notre Dame, or other churches, and there is pretty much always at the Palais beaubourg/centre george pompidou at leats 1 exhibition that is interesting. Not a big fan of the actual permanent collection though.Try to see if any of musuem have late nights opening like the louvres or musee du quai d'orsay as it is a very nice time to visit and the atmosphere is very charming.. "la fleche d'or"(you will have to google that one) used to be a big music/arty trendy bar place back in my days..

Make sure you visit the catacombs of Paris. Absolutely fascinating.
