If you are banking with an international bank like HSBC, go and talk to them first, and do so straight away whilst you are still in the UK. Depending on where you will be working and living there may be a branch where they will open a second account for you and where you can do money transfers from your British account without charges.

By the way, Nationwide, that introduced charges only very recently for withdrawals abroad, are still not charging for France, so perhaps you could open an account with them. It is also worthwhile investigating as it is very easy to open an account by signing a cheque from your present bank and producing a utility bill for where you live.
If not, you should ask the organisation for whom you will be working to give you a letter of recommendation, and also provide a proof of residence when you get there so as to obtain a Carte de Séjour from the local police station. This is no longer obligatory for EU citizens but it does make life easier as it is like an identity card and you can apply to any bank with it. However you will be charged a fee for money transfers. We have found that it is easier and cheaper to do block transfers than to make multiple withdrawals with a card.

I suggest see where you are living first, then choosing a bank near by (because for most operations you'll need to go to that one). Then, call the bank, ask what you need to open an account (typically ID, a minimum deposit, a proof of where you live (electricity bill, etc.), but this varies between banks. Then when you have all the necessary documents, you ask to make an appointment to open an account.

HSBC is a bank for rich people or businesses in France. I know a few Brits who tried opening accounts there and essentially got laughed at.

Good luck!

Walk into a bank, show them your Carte de Sejour and ask about the different kinds of accounts they have. Some pay interest (not much) but you have to ask.
