If I am connecting in Paris for a flight to Nice, do I need to go through immigration in Paris or Nice?

In the airport where you enter the Schengen space, so not Nice.

But could be elsewhere than Paris.

For ex. if the flight is NY / Paris / Nice it will be Paris.
But if the flight is NY / Amsterdam / Paris / Nice, immigration will be in Amsterdam only, and that's all, neither Paris nor Nice.

Schengen countries are: Austria, Belgium, Denmark, Finland, France, Germany, Iceland, Italy, Greece, Luxembourg, Netherlands, Norway, Portugal, Spain and Sweden.

This means that you can make such a trip: Vienna - Bruxelles - Helsinki - Stockholm - Copenhagen - Paris - Berlin - Roma - Athens - Amsterdam - Madrid - Lisbon without any immigration control.

Typically, if you are entering Paris from a non-EU country, you will clear customers in Paris & then fly on to Nice without clearing customs there.
