I've travelled in Europe, many times. The best guides are definitely the green, Michellin Guides. They mention places that the other books don't, have good maps, and concise descriptions. They've never let me down. You may have to buy one each for France & Spain. You won't be sorry. They also rate the attractions and guide you to the best ones.

I suppose it's possible to avoid tolls but it's going to make it a long journey and what you save on tolls you will spend on fuel, it all depends on your reason for avoiding tolls, you can buy a good European route planner for your computer, have a nice trip.

If you go to the aaroutefinder.co.uk it gives you the option to have no toll roads. Enjoy your trip

Use the Internet,put in your point of departure your destination ,there are many different sites offering rout planning they offer choice of most direct/scenic .you can print map,or both map and written route directions,It is simple to use;if you wish to pause for hotel etc,you can select town and ask details of hotels etc,enjoy your journey.

on both these sites you can in-put departure and arrival points and get route details. BUT, remember they calculate that you can(and do) drive at the Max speed allowed throughout the journey with no stops, so add another 1/3 time to journey unless it's short and all on motorway.
