Dijon is a lovely city. It is quiet small but museums are good and almost free.

The buildings have character. You have a city walk to follow if you want? I suggest you go to the tourism office to find out where to start and to get a map (always useful). If you go in city centre, take the time to have a drink on a terrace. If it's sunny, it's amazing!

Obviously the food is good but they have nice alcohol too.

It's quite an interesting town. You don't want to stay there long: a day should suffice.

You could always stop in reims instead of dijon.
Nice small town with a beautiful cathedral.
After that, drive across the border into spain, and stay in Figueres (Salvador Dali museaum) or san sebastian (as stated above) depending if you're going to eastern or western spain.

Its kinda like a paste put on things like sausages i think some people call it mustard????

I would say stay 2 nigts if you have the time so that you can appreciate the area.
If you are going to Northern Spain or through Northern Spain San Sebastion is nice.for a stopover
