The list is very long!
I try with regional food:
Nord Pas-de-Calais : tarte à l'oignon (onion tart), soupe à la bière (beer soup), waterzoï (hard to explain)
Normandie : blanquette de veau (veal in a white sauce), matelote (seafoods with cider), tarte tatin (apple pie with caramel)
Champagne Ardennes : andouillette de Troyes (made with pork intestines)
Alsace Lorraine : choucroute (cabbage, potatoes and pork meats), flammekuech ( a onion and pork tart), quiche lorraine (tart with cheese omelette and pork), sachertorte (chocolate tart)
Paris Ile-de-France : boeuf braisé (braised steack), croque-monsieur (sandwich with cheese and ham grilled), hachis parmentier (mashed potatoes with ground beef)
Bretagne : crêpes (a little bit like pancakes but thinner and it can be salty (with meat, cheese, fish,...) or sweet (with fruit, chocolate,...), seafoods, far breton (a butter cake)
Bourgogne : snails, soufflé au fromage
Poitou-Charentes : cassoulet (meat with haricot)
Auvergne : soupe à l'oignon (onion soup), clafoutis aux cerises (a cherry cake)
Aquitaine : cannelés (sort of cake), crême brûlée (dessert with eggs, sugar, vanilla with a caramel on the top), foie gras, poulet basquaise (chicken with different vegetables)
Rhône-Alpes : fondue savoyarde (different sorts of cheese fondue, you plunge a piece of bread in and you eat), gratin dauphinois (potatoes with cheese), tartiflette (potatoes with cheese and pork meat)
Provence : Aïoli (sauce with garlic and olive oil), daube de boeuf (cooked beef with vegetables), passaladière (tart with onion and anchovy), soupe de poisson (fish soup)

And it's a concise list. You can find a lot of receipes of meet, fish, vegetables, fruits, cake, sweet,... I forgot a lot of other things and the better is boudin noir its' make with blood, head and tripes of pork. And I know that it"s disgusting but in fact it's delicious!

Poulet mayonnaise-- roast chicken with a side of mayonnaise (you cut up the chicken and dip the pieces in mayonnaise).

Steak frites-- beefsteak with a side of French fries (French ppl don't call them French fries, they call'em les pommes frites).

Eclair-- similar to the US eclairs except the filling isn't yellow custard. It's a chocolate filling or coffee filling.

Gateau au chocolat-- chocolate cake: not 2 layers, but one layer, somewhat smaller than in the US (a good thing-- you can enjoy good tasting food without eating too much) and covered with a hard chocolate shell. Sometimes with a chocolate trufflelike filling.

Foret noir-- Black forest cake (chocolate cake with raspberry preserves inside, usually made with real liquor and topped with whipped cream).

The list goes on and on, but you get the idea.

French specialities: Choucroute, crepes, cassoulet, foie gras, croque monsieur, baguette, fondue bourguignone, fondue savoyarde, magret de canard, confit de canard, tartiflette.....
There is so much....
Cake: eclair (delicious), fondant au chocolat, pain au chocolat, croissant, maccaroni.....

Crapes(pernounced;crayps)
Like pancakes only much thinner and wider

Sucre a creme(pernounced;sookakrem,with accent)
a somewhat sauce,often goes on crapes,french cakes and deserts.Very good!If left too long to simmer when making then it will turn into a very tasty fudge!:P
