En replaces the partitive article (du, de la, etc.) or de + the indefinite article (un, une, des) + a noun. It is equivalent to some, any, or a number in English.

As-tu du pain ? Do you have any bread?
Oui, j'en ai. Yes, I have some.

Il a envie d'une pomme. He wants an apple.
Il en a envie. He wants one.

Je n'ai pas besoin d'un aide. I don't need an assistant.
Je n'en ai pas besoin. I don't need one.

If there is a modifier like "beaucoup de" or a number in the sentence, the "en" replaces the noun and the modifier or number is placed at the end of the sentence.

Il y a beaucoup de chambres. There are a lot of rooms
Il y en a beaucoup. . There are a lot (of them).

Je voudrais deux livres. I'd like two books.
J'en voudrais deux. I'd like two (of them).

Nous avons envie de 10 cahiers. We want 10 notebooks.
Nous en avons envie de 10. We want 10 (of them).

Think of it as "some" or "any". In some cases it is for an unspecified amount. For example we could be talking about a glass of water or slice of ham. We don't know exactly how much water or how much ham is being discussed; but we do have a vague idea about it.

Use it when it is understood what you are talking about and you want to shorten your sentence. We do this in English too.

Ie: (sorry, can't make French accents on this pc.)

English: I have some bread. Do you want some?

French: J'ai du pain. Tu en veut?

- or -

English: Q I have have two dogs. Do you have any?
A I have three!

French: Q J'ai deux chiens? Est-ce que tu en as?
R J'en ai trois!
