Nice is nice. The Roman ruins (inside the city) are picturesque. The Med is really blue (all the oceans that I've seen elsewhere are green). The old city part of Nice is a great place to take a walk (no one great building, just a nice experience.).

Eze-le-Village (the walk up from the train station rather than the village itself)
These places are all within a 30-minute train ride from Nice. You could also take a bus from Menton to a small stone village called Ste. Agnes, it's far up in the hills, and then walk back down to Menton. That would take about an hour.
