as in: What do you think of that painting? I like it.

If you use it in the middle of a sentence it means : I like / I quite like / I enjoy
J'aime bien peindre (I like to paint, I enjoy painting)

Yes, they are right. It's "I like very much".

Je = I (when the next word starts with a vowel you add an apostrophe and take the "e" in je off)
Aime = to like
bien = well.

so it basically means "i like it just fine"

it means "i like a lot", which is weird because it would normally be "je t'aime bien" (i like YOU a lot) or "je l'aime bien" (i like IT a lot).
