Hi

France is a big country with varying climatic conditions.
Temperatures can vary between -25C (high alps) to +20C (Mediterranean).

The South has longer hours of daylight (similar to Chicago) and the North slightly less.

There are no set rules for opening hours.
Small shops are generally open 08.00 - 12.00 and 14.00 - 18.00
Larger stores are often open 09.00 - 20.00

i presumed you;re talkin about paris? if so, its cold and wet. if you're lucky, you get to see snow. but they don't look too good once it hits the ground( traffic and all makes it look dirty)

In the regions, it can get even colder than paris. still, it refreshing change from our climate. Its a good time to be in europe in my opinion. freezing cold, wet but hey, if you go prepared it's all good.
if you have time hit the mountains for a white christmas. i recommend les deux alps.
