Kernousse is right, it depends, but usually in Paris the post office opens at 8am and closes at 7 pm, from monday to friday.
On saturday it's opened at 8am, closed at 12.
There's only one exception : the post office of the Louvre is opened 23 hours a day (closed between 6:20 and 7:20 - strange), no day off.

Most of the time post offices are opened from 0900 until 1700 but it depends in which area of paris I suppose that in the touristic and more lively place branches might remain opened longer.
