If it is your first trip to Paris be sure to see all of the main sites (Le Tour Eiffel, La Cathedrale du Sacre Coeur, La Cathedrale de Notre Dame de Paris, L'Arc de Triomphe, Le Musee du Louvre) (The Eiffel Tower, The Cathedral of the Sacred Heart, The Cathedral of Our Lady of Paris, The Arch of Triumph, The Louvre Museum).
However the answer to this is really defined by what type of person you happen to be...(artistic, academic, adventerous, musical...etc.)
If you are Artistic and...
...into Modern Art and Archetecture, then definitely stop by Le Centre George Pompideau, the museum of modern art named after a mayor of Paris, and perchance a visit to La Defense, an area just outside the city limits which is not subject to the architectural limitations imposed on the city center and thus is home to the only skyscraper in Paris, Le Tour de la Defense, or visit Le Musee Picasso, home of many works by the master himself which France aquired as payment for Picasso's death duties.
...into Impressionist Painting and Sculptures, then visit Le Musee d'Orsay, a treasure-trouve of impressinist pieces and a former train station, and definitly stop by Le Musee Rodin where you will find the famous statue, The Thinker (Le Penseur) in the gardens.
If you are Academic...
...I recommend the area around the Sorbonne. Many book stores and the like catering to the students at the University are found here. Le Pantheon, a replica of the Pantheon in Rome and home to the crypts of famous frenchmen and women (e.g. Marie and Pierre Curie and Jean-Jeaques Rousseau), can be found here as well and one can enter it for a fee.
If you are Adventurous...
...dare to dive into the Catacombs, a network of underground caves found under the city and used as graves for the cities dead. Interestingly, the section of the catacombs that is accessible to the public is only a small part of the vast network of underground tunnels in Paris and while the official name for the system is "The quarries of Paris" nowadays it is collectively referred to as the Catacombs.
If you are Musical...
...Visit the Opera houses scattered about the city. One famous opera house is the Paris Opera house, aka the Garnier Opera house, which features busts of great composers on the exterior.
Odds and Ends...
...Visit the Fragonard Perfume Museum near the Opera Metro Station for a fasinating look into the history and making of perfume.
...Visit Pere Lachaise Cemetary where you can see the graves of such notables as Jim Morrison and Edith Piaf.
There are many activities that one can do in Paris; these are just my suggestions. If none of these interest you, I suggest that you simply explore the city...You can never have a dull moment in the City of Lights.
