To get the best prices, buy as far ahead of time as possible. The cheapest times will be outside of French school vacations. In general, January, March, and November are probably the cheapest months. Summer and Christmas are the most expensive times.

International travel is tough to get good prices on but I have heard wednesdays are the best.

Edit:
This was not meant to be a wisecrack answer, something about wednesdays and that way the airline runs its pricing program means wednesday are statistically cheaper days.
