You will always find a place in France which is interesting to visit, because of its landscape, people, history, food, etc...
For example, if you like volcanos, and nature I would recommend Massif Central, in the centre of France, if you like surf I would recommend Biarritz, if you like food, I would recommend Lyon, if you like see, and mountain, then i would recommend (where I am from) the Riviera. If you like castles then I would recommend la Loire.
I am pretty sure people who answered something, only visited the place they named...

Go to the Champagne region in Northern France. The best food, and certainly, the best wine list at reasonable cost. in the small villages (non-tourist), English is uncommon outside the inns - even in restaurants and vineyards. If you want to visit this region without knowing French, I recommend a guided tour:

French Riviera, Rhone, Burgundy,Bordeaux, any of the famous wine regions, Normandy, The French Alps. If you're in Paris and only have a brief stay there, the Champagne region is very close.

Hi :-) ! I really like Southern France. No big towns though. The region around Montpellier is awesome. If you would like to go into a "proper" town, I would suggest Strasbourg. It is not typical France though. It depends on what you are looking for. Have a nice trip!!!
